ALMOND FLOUR GINGER BREAD COOKIES

ALMOND FLOUR GINGER BREAD COOKIES

Ingredients:

  • 1 cup almond flour
  • 1 scoop Vanilla FloFit Protein Powder
  • 2 tbsp coconut flour
  • 1 tsp baking soda
  • 1 ½ tsp ground ginger
  • 1 tsp cinnamon
  • ¼ tsp ground cloves
  • ¼ tsp nutmeg
  • Pinch of salt
  • 2 tbsp coconut oil, melted
  • 2 tbsp sugar-free maple syrup or monk fruit sweetener
  • 1 tsp vanilla extract
  • 1 egg

Instructions:

  1. Preheat oven to 180°C (350°F) and line a baking tray with baking paper.
  2. In a bowl, whisk together all dry ingredients until combined.
  3. Add coconut oil, sweetener, vanilla, and egg. Mix until a soft dough forms.
  4. Roll dough between two sheets of baking paper and cut into festive shapes.
  5. Transfer to tray and bake for 8–10 minutes, until edges are lightly golden.
  6. Cool on a rack and enjoy once set.
