PCOS APPROVED KEY LIME PIE Ingredients: BASE LAYER 1 cup walnuts (or almonds)1 cup oats (GF if needed)Pinch salt1 Tbsp maple syrup3 Tbsp coconut oilCREAMY LIME LAYER 1 cup raw cashews (soaked 1 hr in boiling water)1 cup coconut cream (the thick part)2 Tbsp corn starch1/2 cup fresh lime juice1 Tbsp grated lime zestPinch of salt1/4 cup maple syrup Instructions: Preheat the oven to 180°C (350°F).Blend base ingredients into a dough, press into a small cake tin, and bake for 18 mins.Blend all lime layer ingredients until smooth. Pour over base and bake 21 mins, until set.Cool completely, refrigerate for at least 4 hours or overnight.Decorate with lime slices, zest, and mint (optional).
