PCOS FRIENDLY CHRISTMAS BARK Ingredients: 600g dark chocolate (at least 70%)1 cup of nuts and seeds (roughly chopped) - I used pistachios (which are extra perfect for some christmas green), almonds and pepitas¼ cup shredded coconut¼ cup goji berries or dried cranberries (here is the christmas red)½ tsp sea salt Instructions: Break the chocolate into pieces and melt chocolate in a microwave safe bowl in 30-second increments, stirring throughout.Cover a large baking tray with baking paper.Pour chocolate onto the baking tray with baking paper.Sprinkle the chopped nuts and seeds, coconut, goji berries and sea salt over the top.Place in a refrigerator to set. Break into large pieces and enjoy as a snack or give wrapped up as presents.
