Vanilla Matcha Protein Balls

These Vanilla Matcha Protein Balls are an easy little snack combining protein, fibre and healthy fats in one seriously delicious bite. Matcha and vanilla give them a fresh, slightly sweet flavour, while almond butter, chia and coconut make them satisfying enough for a mid-morning snack, afternoon pick-me-up or post-workout option.

Ingredients:

1 scoop Vanilla FloFit Protein
1/4 cup almond butter
2 tbsp chia seeds
1 tsp matcha powder
1–2 tbsp unsweetened almond milk, as needed
2–3 tbsp unsweetened shredded coconut, for rolling

Makes approximately 6

Instructions:

Add the Vanilla FloFit Protein, matcha powder and chia seeds to a medium bowl and mix well.
Add the almond butter and 1 tablespoon of almond milk. Mix until a thick dough forms.
If the mixture is too dry or crumbly, add additional almond milk, 1/2 tablespoon at a time, until it holds together.
Roll the mixture into small balls, approximately 1 inch in diameter.
Roll each ball in the shredded coconut to coat.
Refrigerate for at least 20 minutes to firm up.
Store in an airtight container in the refrigerator for up to 5 days.
